Watermelon with Manuka Syrup & Chantilly Cream

Ingredients:

1/4 Watermelon
½ Cup Manuka honey MGO 30
200 ml hot water (Not boiling)
200 ml Thickened Cream
1 tsp Vanilla Bean Paste
1 Tbsp Icing Mixture
The zest of 1 orange

Method:

  1. Cut the Watermelon into triangles and remove the skin.
  2. Divide the Watermelon into bowls. Pour the Honey into the hot water and stir well until dissolved.
  3. Pour the syrup over the Watermelon and place in the fridge for 15 – 20 minutes to chill.
In the meantime, whip the cream with the Vanilla Bean Paste and Icing Mixture until it reaches a dollop consistency.  Serve with the watermelon and sprinkle zest of the orange over the top.
